Galentines Gourmet Pancake recipes

As Clarity dedicated an entire feature to Galentines day, which falls on shrove Tuesday, we thought you'd want some perfect pancake recipes to share with your girlfriends. Tuck in to 'adult' toppings with Gin and Tonic, Very berry coulis and chocolatey nutty goodness! They're nutritious...as far as pancakes go...

Pancake Ingredients:
180ml milk
1 tbsp lemon juice

130g plain flour
30g caster sugar

1tsp baking powder 


1/2 tsp bicarbonate of soda
30g melted butter

Pancake Method:
Add lemon juice to milk and leave for a few minutes. This turns it into buttermilk, meaning you'll have the fluffiest pancakes ever.

In a bowl, combine all the dry ingredients and pour in the melted butter, egg and milk. Whisk together until completely smooth and lump free.

Oil a pan on a medium heat and spoon some of the mixture on. Cook until bubbles appear and then flip the pancake over. And cook for a few minutes.

Remove from the heat and enjoy!


Very Berry Ingredients
Handful of frozen but defrosted berries
2tbsp honey

Very Berry Method:
Mash the berries up, juice and all, add the honey and you are good to go! Simples. Add a sprig of mint, and a drizzle of cream for effect!


Gin and Tonic drizzle with glazed lemon
1 lemon sliced
125ml of water / tonic water
125g of caster sugar
Juice of 1 lemon
Juice of 1 lime
50ml of gin
150g of caster sugar

Gin and Tonic method:
For glazed lemon (or lime works just as well!), add the tonic water to a saucepan and add your sugar.
Set over a medium heat and stir until the sugar has dissolved. Add your lemon slices and bring to the boil.
Reduce to a simmer after 1 minute. Leave to simmer for 10-12 minutes.
Remove from the heat and carefully remove the lemon, and coat with extra caster sugar.
Leave them to dry before placing on top of your pancakes!
For the drizzle : In a bowl, combine the lemon juice, lime juice, gin and caster sugar.


Chocolate banana nut Ingredients
Chocolate hazelnut spread
Hazelnuts / your favourite nut!
Dark Chocolate 70%+
Chocolate sauce (optional)
Banana (optional)

Chocolate nut method:
Pre-chop your nuts and banana while each pancake is cooking.
Smother your pancakes in chocolate spread and place your sliced banana on top.
Sprinkle with the nuts and grate your dark chocolate on top for a truly sophisticated look.
