Millie's Chilli and Lime Chutney

For those of you that like more bite in your food, this is your chutney - the mix of chilli and ginger give it an incredible warming kick that will add a little heat to your cheesy treats. The classic flavour combination of chilli, lime and ginger is something we all know and love but with the addition of garlic and mustard seeds, this chutney has a depth to it that is completely new. It works just as well with all the delicious food on the sharing board, but with a little added zing!

Ingredients:
Makes two 200ml jars
800g tinned chopped tomatoes
2 red chillies
5 shallots
15g fresh ginger
2 garlic cloves
Zest and juice of 1 lime
450g caster sugar
200ml white wine vinegar
1 ½ tsp mustard seeds
Pinch salt
¼ tsp pepper

Method:
Drain the chopped tomatoes through a sieve.

Keep the tomatoes and 100ml of the juice that has been drained off and discard the rest of the juice.

Place the chilli, shallots, ginger, garlic and lime zest and juice into a blender and blend into a paste.

Put into a heavy bottomed saucepan with the sugar, vinegar, mustard seeds and the tomato juice you have saved.

Bring to a boil, then lower to a simmer until it has reduced by a third.

Add in the tomatoes, salt and pepper and continue to simmer on a low heat for 1 ½ hours until it has thickened and has a glossy surface - making sure to stir occasionally.

Pour into sterilised jars, put on the lids and leave to cool.
